Mark Estee’s Panzanella Salad

Mark Estee, one of Reno-Tahoe’s favorite celebrity chefs shared one of his favorite summer salad recipes with the team at Sierra Sotheby’s International Realty. Pair this recipe with seasonal veggies from your local farmer’s market for a guaranteed party pleaser.

Serves 2 to 4 people

Farmers Market Panzanella Salad

1 loaf crusty bread

4 oz red wine vinegar

4 oz olive oil

2 ea cucumber (so many types at the market)

4 ea tomato (heirloom, so many types to choose)

2 ea favorite Farmers Market Vegetable (example eggplant, squashes, zucchini, carrots)

2 ea favorite Farmers Market Greens (example arugula, specialty lettuces, pea shoots, dandelion greens)

4 oz olives (your choice) + juice

4 oz fresh mozzarella + juice

1 bunch Basil

Kosher salt and fresh pepper



Cut the Bread into slices

Toast the bread

Diced the bread

Dice cucumbers

Dice the tomatoes

Dice the Farmers market vegetable

Chop the Farmers market greens

Chop the olives

Chop the cheese

Toss Bread and all the vegetables and cheese in a bowl

Add the olive and cheese juice

Add the Oil and Vinegar

Chop the basil and add to the bowl

Season with salt and Pepper
